Cast Iron vs Wrought Iron
One of these you can buy today. The other stopped being made in 1973 — which makes this a much shorter argument than the internet pretends.

You cannot buy a wrought iron pan, because nobody has made wrought iron commercially since 1973. The two metals really are different — wrought iron is soft, fibrous and hammer-forged, cast iron is carbon-rich, brittle and poured into a mold — but only one of them is still in production, and it is the one in your kitchen. The short answer: one of these is no longer produced
This is the fact that ends most of the argument, and almost nobody leads with it. Wrought iron is no longer produced on a commercial scale. The last plant in the United States closed in 1969, and the last in the world — the Atlas Forge of Thomas Walmsley and Sons in Bolton, England — closed in 1973.
So when you see a "wrought iron" gate, railing, garden bench or pot rack for sale, you are not looking at wrought iron. Those products are made of mild steel and carry the old name because they resemble things that used to be wrought — that is, worked and shaped by hand. The word survived as a style description long after it stopped being a material description.
Cast iron, by contrast, is made in enormous quantities today, and has been used for cooking for a very long time: the first mention of a cast-iron kettle in English appeared in 679 or 680, and China, India, Korea and Japan have an even longer history of cooking in cast-iron vessels. Every skillet and dutch oven on this site is cast iron or enameled cast iron. None of them are, or could be, wrought iron.
The difference is carbon, and carbon decides everything
Both metals are iron with some carbon in it. The amount of carbon is the whole story, because carbon is what makes iron hard, and hardness is what decides whether you can hammer the metal into shape or have to pour it into a mold.
Line the family up and the ladder is obvious:
- Wrought iron: less than 0.05 percent carbon — barely any. Soft, bendable, forgeable.
- Mild (low-carbon) steel: about 0.05 to 0.15 percent. This is what today's "wrought iron" furniture is.
- Carbon steel (the cookware kind): up to about 2.1 percent, with pan-grade metal sitting well down that range.
- Cast iron: roughly 1.8 to 4 percent carbon plus 1 to 3 percent silicon — an order of magnitude more carbon than wrought iron.
That gap does something dramatic. With almost no carbon, wrought iron is highly malleable and much easier to bend; a blacksmith heats it and hammers it, and it is easily forge welded. Load the metal with carbon and it goes the other way entirely: cast iron is too brittle to bend or shape without breaking. You cannot forge it. The only way to make a shape out of it is to melt it and pour it into a mold — which is precisely where the word cast comes from.
This is not a defect in cast iron. It is the trade that makes a skillet possible. Casting lets the walls be thick, and thick iron is the reason cast-iron pans store more heat longer than copper, aluminum, or stainless steel pans. That stored heat is what keeps a steak searing instead of steaming, and it is the single property the whole material is bought for. A soft, thin, hand-forged wrought iron pan would have almost none of it.
What wrought iron actually was
Wrought iron was not simply "iron with less carbon." Its defining feature was that it was never fully melted, so it kept the slag from smelting trapped inside it: fibrous slag inclusions of up to 2 percent by weight, at something like 250,000 inclusions per square inch, which give the metal a wood-like grain you can see when it fractures.
Those fibers are why the material was prized. Wrought iron is described as tough, malleable, ductile and corrosion resistant — the metal of chains, anchors, rivets, ornamental ironwork and the great Victorian structures. Cast iron behaves in the opposite way under stress: in gray iron, the graphite flakes deflect a passing crack and start countless new ones, which is a good description of what happens when you drop a skillet on a tile floor.
Worth flagging honestly, because it is often overstated: wrought iron's rust resistance varies depending on where the metal came from and how it was made. The slag can spread corrosion into an even film rather than deep pits, but some studies find those same inclusions act as pathways for corrosion. "Wrought iron does not rust" is folklore, not metallurgy.

So what is the "wrought iron" you keep seeing for sale?
Mild steel, in almost every case. Gates, railings, garden furniture, pot racks, plant stands, bed frames, and the occasional pan or skillet handle listed as "wrought iron" are low-carbon steel finished in matte black to look hand-forged. The listing is not usually lying on purpose; the trade has used "wrought iron" as a style word for decades.
For a buyer, the practical consequence is simple: if a cookware listing says wrought iron, treat the phrase as decoration and go find out what the pan is really made of. If it is thin, light and stamped from sheet, it is carbon steel — a genuinely good material, and one we rank in our best carbon steel skillets guide. "Is my old pan wrought iron?" — how to tell

- Look for a seam or gate mark. A cast pan comes out of a mold, so it often carries a faint mold line or a raised sprue scar across the base. Hammered stock does not produce those.
- Feel the weight.Cast iron is thick and heavy for its size. That mass is the material's whole selling point.
- Check the surface.Older cast iron is often machined smooth, modern Lodge-style iron is slightly pebbly — a distinction we unpack in smooth vs rough cast iron. Neither looks like forged, grained bar stock.
- Consider the date. If the pan was made after the early 1970s, wrought iron was not commercially available to make it from.
Whatever it turns out to be, the good news is that the rescue is the same. Bare iron is bare iron: strip it, scrub the rust, and season it with thin coats of oil until the surface is slick, which is all that seasoning has ever been — polymerized oil bonded to metal. The comparison you actually want
If you came here to decide what pan to buy, the live fork in 2026 is cast iron against carbon steel, not cast iron against a metal that left production over fifty years ago. Both are bare iron you season identically; the difference is thickness. Cast iron is thick and heavy and holds heat ferociously, which makes it the better searing, baking and oven pan. Carbon steel is thin, light and responsive, which makes it better for eggs, stir-fries and fast stovetop work.

One last practical note that applies to any bare iron pan you end up with: long, acidic cooking is the thing to watch. Exposure to acidic foods such as tomatoes damages the seasoning, though testing found short exposure had no noticeable effect.
