Cast Iron vs Cast Aluminum

One is heavy and hoards heat; the other is a third of the weight and heats in a flash. The right pick comes down to how much you value heat retention over easy lifting.

Buy cast iron if you want to sear, hold a steady temperature, and own a pan for life — its weight is the price of heat retention. Buy cast aluminum if weight is the deciding factor: it is about a third as heavy, heats fast, and responds instantly, but it loses temperature the moment cold food lands and does not sear like iron. Many "lightweight dutch ovens" are actually enameled cast aluminum.

This is really a question of two metals with opposite personalities. Cast iron is dense and holds a huge amount of heat; aluminum is light and conducts heat extremely fast but stores very little of it. Both are cast— poured into molds — so the shapes look similar, and you will find cast aluminum skillets, griddles, and especially lightweight enameled "dutch ovens" sold right alongside the iron ones. The metal underneath, not the shape, is what changes how they cook.

Where cast iron wins: heat retention and searing

Cast iron's density gives it thermal mass: it stores heat and hands it back to the food, so when a cold steak or a basket of vegetables hits the pan the temperature barely dips and the searing keeps going. That is what drives a hard Maillard crust, and it is the one thing a light pan cannot do. Cast iron also takes any heat, works over a campfire, is induction-compatible, and lasts for generations. The cost is exactly that mass: it is heavy, and it is slow to heat up and slow to change temperature.

Where cast aluminum wins: light weight and speed

Cast aluminum's appeal is simple: it is light and it is fast. At roughly a third the weight of iron, it is dramatically easier to lift, especially as a big pot — which is exactly why lightweight enameled dutch ovens are made from it and marketed to people who find cast iron too heavy to handle. It heats quickly and responds the instant you change the burner. The trades follow from the same low mass: it does not hold heat, so the temperature crashes when you add cold food and it browns poorly; bare aluminum reacts with acidic food and so is almost always coated in enamel or nonstick, which can wear; and it is generally not induction-compatible unless the maker adds a steel base.

So which should you buy?

For cooking performance and longevity, cast iron is the better buy — the searing and heat retention that define good cast iron are exactly what aluminum lacks, and a bare skillet or an enameled dutch oven will outlast a coated aluminum pan many times over. Cast aluminum earns its place for one honest reason: weight. If lifting heavy cast iron is genuinely difficult — a common reason people give up a beloved dutch oven — a lightweight enameled aluminum pot is a reasonable trade of searing power for manageability. Choose iron for the cooking; choose aluminum when the weight of iron is the real obstacle. Quick gut check: if you sear and want a pan for life, buy iron and accept the weight. If you cannot comfortably lift cast iron, a light cast aluminum pot is a fair trade — just know you are giving up the sear.

Does cast aluminum work on induction?
Usually not on its own — induction needs a magnetic metal, and aluminum is not magnetic. Some cast aluminum cookware adds a steel base to work on induction; check the label. Cast iron is inherently induction-compatible.
Why is cast aluminum so much lighter than cast iron?
Because aluminum is far less dense than iron — roughly a third the weight for the same size pan. That lightness is its main advantage and also the reason it stores little heat and loses temperature quickly when food is added.
Can you sear a steak in cast aluminum?
