How to Remove Stains From Enameled Cast Iron

That brown film inside a light-colored pot is stain, not damage. A baking soda simmer, a paste, or a gentle cleaner brings the enamel back. Here is how.

That brown discoloration inside a light-colored enameled pot is staining, not damage — the enamel is perfectly fine underneath. You lift it with gentle, patient methods: simmer water with baking soda in the pot, scrub with a baking soda paste, or use a purpose-made cookware cleaner or Bar Keepers Friend used lightly, which is what Le Creuset itself recommends. First, know that staining is not damage

The brown is a surface deposit sitting on top of the vitreous enamel, not a wound in it. The glass surface is inert and intact; it has simply picked up a stubborn film the way a light-colored coffee mug does. So this is a cleaning job, not a repair job, and it does not affect how the pot cooks or whether it is safe. That framing matters because it tells you to reach for cleaners and patience, not for force — the enamel does not need to be stripped, just wiped clean. Method 1: the baking soda simmer

This is the gentlest fix and often all you need for a light-to-moderate film. It is also the first thing to try for stains that cover the whole base.

  1. Add water and baking soda. Put a couple of inches of water in the pot along with a few generous spoonfuls of baking soda.
  2. Bring it to a gentle simmer. Warm it up slowly and let it simmer for several minutes. The mild alkaline solution loosens the browned-on residue so it lets go of the glass.
  3. Cool, then scrub.Let the water cool to a safe temperature — do not dump the hot pot into cold water — then scrub with a soft sponge or a nylon brush. Much of the brown will wipe away.
  4. Repeat if needed. Heavy staining may take two rounds. Patience here beats reaching for anything harsher.

Method 2: the baking soda paste

For localized stains or spots the simmer did not fully clear, make a paste of baking soda with a little water — about the texture of toothpaste. Spread it on the stained areas, let it sit for a few minutes to do its work, then scrub gently with a soft sponge or cloth and rinse. The paste gives you a touch more mechanical cleaning power than the simmer without being abrasive enough to scratch the glass. Baking soda is a mild abrasive and a mild alkali, which is exactly the combination that lifts cooked-on film while leaving hard enamel untouched.

Method 3: a cookware cleaner or Bar Keepers Friend

For the deepest, most stubborn staining, a purpose-made cookware cleaner is the strongest tool that is still safe. The rules for using them are simple:

  • Use it gently and sparingly.Make a paste with a little water, apply it to the stained areas, and rub with a soft cloth or sponge — not a scouring pad. You are polishing, not grinding.

For burnt-on food: soak or deglaze first

If the problem is not a thin brown film but actual burnt-on food stuck to the bottom, loosen it before you clean the stain underneath. Fill the pot with warm water, add a squirt of dish soap or a spoon of baking soda, and let it soak so the stuck food swells and releases. For fresh fond, you can deglaze while the pot is still warm — add a little water and bring it to a simmer to lift the browned bits, then wipe them away. Once the burnt food is gone, treat any remaining stain with one of the three methods above.

The honest reassurance: a stained enameled interior is not ruined and it is not less safe. It is a light film on inert glass, and it comes off with baking soda and a little patience. If it does not come perfectly bright, a faint honey tint on a well-used pot is completely normal and harmless.

What NOT to do

The ways to make things worse are as important as the ways to clean, because the wrong move turns a cosmetic stain into real damage:

  • No steel wool or harsh abrasives. Steel wool, metal scouring pads, and gritty scouring powders will scratch and dull the glass. Scratched enamel stains faster and looks worse, so you would be trading a wipeable film for permanent damage.
  • No thermal shock.Do not fill a hot, empty pot with cold water to "soak" it, and do not run cold water over hot enamel. The sudden temperature swing can craze or crack the glass — the same thermal shock that damages bare iron. Let the pot cool first.
