Why Use Cast Iron Over Stainless Steel?

Stainless and cast iron are built to do different things, and the marketing rarely says so. Here is what cast iron genuinely does better, in the order it matters.
It holds heat, so it actually sears
Cast iron's advantage is its thermal mass. When you lay a cold steak on a hot cast-iron pan, the heavy metal barely drops in temperature, so the surface keeps driving the Maillard reaction that makes a brown crust. It becomes nonstick without a coating
A well-seasoned cast-iron pan releases food from a surface of polymerized oil, not a sprayed- on chemical layer that wears out. Stainless has no such surface — food sticks to bare stainless readily, which is why stainless cooks learn to preheat precisely and use plenty of fat. It is cheap, oven-safe and effectively immortal
A cast-iron skillet costs a fraction of a quality stainless pan, goes from stovetop to a 500°F oven to the grill without a thought, and cannot really be worn out — rust and stripped seasoning are both fully reversible, so a neglected pan is rescuable. A stainless pan is durable too, but it is more expensive and cannot be brought back from a deep scorch the way iron can. For value and lifespan, cast iron wins outright.
The honest counterpoint: where stainless wins
Cast iron is not the better tool for everything, and pretending it is would be dishonest. The verdict
Own both if you can: a cast-iron skillet for searing, roasting and eggs, and a stainless pan for sauces, acids and quick, precise cooking. If you can only buy one and you value a hard sear and a nonstick surface over acid-friendliness, choose cast iron — it does more of what home cooks actually want, for far less money, and it lasts a lifetime.
