How to Clean a Cast Iron Griddle

A cast-iron griddle cleans on the same principle as a skillet: scrape off food while it is still warm, wash with warm water and a scrubber (a little soap is fine), dry it completely on the heat, and wipe a thin coat of oil. The twists are practical, not different: a griddle is a big flat surface, often spanning two burners, and a reversible model has a grease channel to clear. Scrape while warm, deglaze stubborn spots with a splash of water on the hot surface, and never soak it or leave it wet. Do that and a griddle stays as slick as any well-kept pan.

Scrape while it is still warm
The best time to clean a griddle is right after cooking, while it is still warm (not screaming-hot). Use a metal or nylon scraper or a pan scraperto push food residue and grease off the flat surface into the channel or a bowl. Most of a griddle's mess comes off dry, with just a scrape, before any water is involved — the large flat top makes this easy. A splash of water on the still-hot surface will steam and lift stuck-on bits (deglazing), which you then scrape away.
Wash the surface, clear the grease channel
Once scraped, wash the griddle with warm water and a stiff brush or chainmail scrubber; a little dish soap is fine on modern seasoning and helps cut the grease a griddle accumulates. Pay attention to the grease channelon reversible and rimmed models — fat pools there and goes rancid if left, so clear and wash it every time. If your griddle is a big two-burner slab, work in sections over the sink or wipe it down in place; you do not need to submerge the whole thing, and you should not soak it.
Dry completely — the step that matters most
A griddle's large flat surface holds water in a thin film that is easy to miss, and any water left sitting is what rusts bare iron. Towel it dry, then set it on a burner (or two) on low for a minute or two until every trace of moisture is gone. Oil it thin, and re-season the flat top as needed
With the dry griddle still warm, rub a very thin coat of neutral oil over the whole cooking surface and wipe it back until it looks barely oiled.
