How to Season Carbon Steel
A new carbon steel pan comes raw and silver. A few thin coats of oil, baked hard, turn it bronze, then black, then non-stick. Here is the whole method.

Seasoning carbon steel is the exact same job as seasoning cast iron: scrub off the factory coating, then bake on several whisper-thin coats of a neutral, high-smoke-point oil until the metal turns bronze and then black. Two to four coats gets you a slick, working pan. The pan does the rest itself — every time you cook with fat, the seasoning gets a little deeper. There is no magic and no mystery, only thin coats and patience.
A brand-new carbon steel pan is one of the few pieces of cookware you have to finish yourself. It ships raw and shiny, protected by a thin coat of wax or lacquer so it does not rust on the shelf. Your job is to remove that coating and replace it with real seasoning. The good news is that carbon steel and cast iron are chemically the same story, so if you have ever seasoned a skillet, you already know how to do this. It is the same chemistry as cast iron
Both cast iron and carbon steelare iron with a little carbon in them. The difference is mostly how much: cast iron has more carbon and is poured thick, while carbon steel has less and is rolled thin. For seasoning, that difference does not matter at all. In both cases the seasoning itself is a layer of oil that has been heated past its smoke point until it changes into a hard, bonded solid — a process the cookware-seasoning literature calls polymerization. Certain oils do this more readily because they are drying oils, the same family of oils used to finish wood, which harden into a film when exposed to heat and air rather than staying greasy.
Because it is the same chemistry, it uses the same oils. Reach for a neutral, high-smoke-point oil: grapeseed, canola, plain vegetable oil, or refined avocado oil are all excellent and cheap. Skip extra-virgin olive oil and butter for this — they scorch before they set and leave a sticky, streaky coat.
Step 1: strip the factory coating
This is the one step that is different from a pre-seasoned cast iron pan, and it is the step people skip and then wonder why their seasoning will not stick. That silver, slightly greasy or waxy film on a new pan has to come off completely, or your seasoning will just bond to the wax instead of the metal.
- Wash it hard with hot, soapy water. For a brand-new pan this is the one time you scrub with real determination. Use hot water, dish soap, and an abrasive sponge or a stiff brush. Get into the rivets and the corners.
- Keep going until it squeaks. You are trying to remove every trace of the protective wax. If the water still beads up and rolls off in a greasy way, keep scrubbing. Some coatings need a second pass with a scouring pad.
- Dry it completely. Towel it, then set it on a warm burner for a minute until every drop of water has flashed off. Raw carbon steel with no seasoning will flash-rust fast, so do not leave it wet even for a few minutes.
Do this scrub only once, when the pan is new.After it is seasoned, you treat carbon steel gently, exactly like cast iron — a light wash, never a hard strip. The aggressive scrub is strictly for removing the factory coating from bare metal.
Step 2: build the seasoning in thin coats
Now you lay down real seasoning, one microscopically thin coat at a time. The single most important rule — more important than which oil, which method, or which pan — is that each coat must be so thin the pan looks dry before it gets hot. You can build the coats on the stovetop or in the oven. Both work; they suit different pans.
Method A: the stovetop (best for carbon steel)
Most carbon steel is a skillet or wok with a long metal or riveted handle, and the stovetop method is the classic way to season it. It is fast and you can watch the color change happen.
- Heat the dry pan. Put the clean, dry pan on a burner over medium to medium-high heat until it is hot.
- Wipe on a tiny bit of oil. Add a few drops of neutral oil and spread it all over the cooking surface with a paper towel held in tongs. Then, with a fresh towel, wipe almost all of it back off. The pan should look barely damp, not wet.
- Heat until the color shifts and the smoke stops. Keep the pan on the heat. It will smoke lightly as the oil polymerizes, and the metal will start to change color. When the smoking dies down, that coat has set.
- Cool, then repeat. Let it cool enough to handle, then repeat the thin-oil, heat-until-set cycle two to four times, tilting the pan to season the walls as well as the base.
Method B: the oven (best for oven-safe handles)
If your pan is fully oven-safe, the oven gives a beautifully even coat because hot air surrounds the whole pan at once. Wipe on a thin coat of oil, buff it back until the pan looks dry, set the pan upside down in a hot oven — hot enough to push your oil past its smoke point — with foil beneath to catch drips, and bake until the coat is set. Let it cool, then repeat two to four times. It is the same process we use for cast iron, just applied to a thinner pan.
The color change: silver to bronze to black
Watching carbon steel season is genuinely satisfying, because unlike cast iron it starts out bright silver and you can see every stage. As the coats build, the raw metal turns straw, then bronze and gold, often with blue and purple heat-tinting near the handle, and finally settles into brown and black. Those colors are not evenness you need to worry about — a blotchy, multicolored pan is completely normal and will darken and even out with use. What you are looking for is not a perfect uniform black but a surface that has stopped being bare silver metal. Do not chase a mirror finish; chase a working one.
Maintenance: cooking is seasoning
Once you have those first two to four coats, the pan is ready to cook, and cooking is what finishes the job. Every time you fry an egg, sear a steak, or sauté onions in a little fat, you are adding another micro-layer of seasoning. This is why a carbon steel pan gets better for years. The care routine after that is identical to cast iron:
- Wash gently, while warm.Hot water and a soft sponge or a chainmail scrubber for anything stuck. A little soap is fine on a seasoned pan — it will not strip a bonded coat.
- Dry it immediately and fully. Carbon steel is thin and rusts even faster than cast iron when left wet. Towel it, then warm it on the burner to drive off the last of the moisture.
- Wipe on a whisper of oil. A few drops buffed until the pan looks dry seals the surface and lays down one more coat before it goes in the cupboard.
