Stainless steel: nonreactive and unfussy

Stainless steel is the pan you buy when you want to stop thinking about the pan. It never needs seasoning, it is safe with tomatoes, wine, lemon, and vinegar, it is dishwasher-safe, and you can scrub it with anything short of a grinder without doing harm.
