For a griddle, buy cast ironif you want the steadiest, most heat-stable flat-top — it holds temperature through a stack of pancakes or a batch of smash burgers without flinching. Buy carbon steel if you want a lighter griddle that heats and reacts faster and is easier to lift and store. Both are bare, seasoned iron that sear the same and need the same care. The everyday difference is thermal mass against weight: cast iron holds more heat but is heavier; carbon steel is nimbler but dips in temperature faster when cold food lands. A griddle is a flat cooking surface for the food you cannot do in a bowl-shaped pan — pancakes, eggs, bacon, quesadillas, smash burgers, a full breakfast at once. Both cast iron and carbon steel make excellent ones, and both are the same kind of surface: bare iron you season into a nonstick finish. The differences are about weight and how the surface behaves under a crowd of food.
Heat retention: cast iron holds, carbon steel dips
Cast iron is thicker and heavier, so it stores more heat. On a griddle that matters: lay six cold burger patties on a cast-iron flat-top and it barely loses temperature, so every patty sears evenly. Do the same on a thinner carbon-steel griddle and the surface cools faster, which can mean the first patties sear and the later ones steam until it recovers. Responsiveness and weight: carbon steel is nimbler
The flip side is that carbon steel heats up faster and responds faster when you change the burner — useful if you want to move a griddle up and down in temperature quickly. It is also lighter, which makes a big rectangular griddle far easier to lift onto the stove, flip on a two-burner model, and store. If your griddle lives in a cupboard and comes out for weekend breakfast, the lighter carbon-steel plancha is friendlier to handle. Warping, thickness and the stovetop question
Very thin carbon-steel griddles can warp if you overheat them or thermal-shock them, rocking slightly on the burner; a thick cast-iron griddle is essentially immune to that. On the other hand, a large cast-iron griddle spanning two burners can heat unevenly over a single flame and is heavy to manage.
