Cast Iron Prime Rib: Low Oven First, Hard Sear Last
A standing rib roast is the most expensive thing most people cook all year, and the traditional blast-it-hot method is the least reliable way to do it. Reverse-searing in cast iron gets you an even interior and a crust that a roasting pan cannot produce.

Salt the roast 24 hours ahead, cook it in a 250°F oven until the center is about 10°F below your target, rest it, then sear it hard in a ripping-hot cast iron skillet for two minutes a side. The low oven cooks the meat evenly; the skillet builds the crust. Doing it in that order — instead of the traditional hot-then-low — is the single biggest improvement you can make to a holiday rib roast.
A standing rib roast is a big, thick, expensive cylinder of meat, and the classic method — blast it at 450°F, then drop the heat — guarantees a thick band of overcooked gray meat around a correctly cooked center. That gray band is not a flaw in your oven. It is what happens when you drive a lot of heat into the outside of a thick roast to build a crust.
Reverse-searing separates the two jobs. Cook the meat gently until it is exactly where you want it edge to edge, then apply crust in a two-minute burst of heat so violent that it never has time to travel inward. Cast iron is the pan for that second step for the same reason it is the pan for steak: it stores an enormous amount of heat and dumps it into the surface instead of stalling on contact.
Buying the roast
- One rib feeds two people.A three-rib roast (about 6 to 7 lb) is right for six. Ask the butcher which end — the loin end (ribs 10-12) is leaner and more uniform, the chuck end (ribs 6-9) is fattier and more flavorful. There is no wrong answer, only a preference.
- Bone-in beats boneless for evenness and for the insulation the bones provide, and the bones are the best part of the leftovers. Ask for it cut off and tied back on if you want easy carving.
- Do not buy more roast than your skillet can sear. A three-rib roast is about as much as a 12-inch skillet will handle on its side. Larger than that and you will be searing in sections, which works but takes longer and cools the pan.
The day before
Pat the roast dry, salt it heavily on every surface — about 1 teaspoon of kosher salt per pound — and leave it uncovered on a rack in the fridge. Same principle as the turkey: the salt seasons the interior, the dry fridge air dries the surface, and a dry surface browns far faster than a wet one when it meets the pan.
Take it out of the fridge two hours before cooking. A cold center on a seven-pound roast adds a genuinely long time to the low-oven stage.
Stage one: the low oven
- Heat the oven to 250°F. Set the roast bone-side down — the bones are your rack — in a 12-inch cast iron skillet or on a rack in any oven-safe pan. Grind pepper over it now; pepper scorches at sear temperatures, so it goes on before the low stage, not before the sear.
- Cook until the thermometer in the center reads about 10°F below your target. The USDA safe minimum for beef roasts is 145°F with a 3-minute rest. Cooking below that is a personal-risk decision that a great many people make with whole-muscle beef, and we are not going to pretend otherwise — but the published safe number is 145°F, and that is the one we will give you.
- Budget roughly 30 to 40 minutes per pound at 250°F, and then ignore that estimate in favor of the thermometer. Start checking early. A roast that overshoots cannot be walked back.
- Rest it 30 minutes out of the oven, loosely tented. Yes, before the sear. This is the step people skip and it is the whole trick: a rested roast will not gush juice into the pan and steam itself when it hits the heat.
Stage two: the sear
- Get a 12-inch cast iron skillet properly hot — five to eight minutes over medium-high, until a drop of water skitters. Add a tablespoon of a high-smoke-point oil, not butter.
- Sear the fat cap first, then each side, 1 to 2 minutes each, pressing with tongs so the whole surface makes contact. You want deep brown, not black. This is the Maillard reaction doing in three minutes what an hour of dry oven heat does badly.
- Kill the heat, add butter, a smashed garlic clove and thyme, and baste for 30 seconds. Now the butter is safe — the pan is coming down, not going up.
- Carve immediately. The roast already rested; a second long rest just lets the crust go soft.

What to do with the drippings
Pour the rendered fat into a hot muffin tin or a small cast iron pan, add a batter of equal parts egg, milk and flour, and bake at 425°F for Yorkshire puddings. A cast iron muffin pan is genuinely better at this than a steel one, because it holds enough heat to shock the batter upward the moment it lands.
Whatever fat you do not use, strain it and keep it. Beef dripping is excellent for roast potatoes, and it is one of the few fats that is actively good for the pan — it is a seasoning contributor, not a stripper.
How to not ruin an expensive roast
The thermometer is the recipe
Every time given here is an estimate that depends on the shape of your roast, the accuracy of your oven and how cold the meat was. The internal temperature is the only real instruction. If you buy one thing before the holidays, buy an instant-read thermometer, not another pan.
Do not sear in enameled cast iron
A hard, dry, empty-pan sear is exactly the use case enameled cookware is worst at. Lodge tells you plainly not to heat enameled cookware empty on the stovetop, and the enamel can stain or craze under that kind of dry heat. A 12-inch skillet is the minimum
A 10.25-inch pan will not let a three-rib roast lie on its side. If your only large pan is a grill pan, use it — the ridges cost you contact area and therefore crust, but they will do. A flat skillet is better.
Skip the roasting rack, use the bones
A bone-in roast comes with a rack attached. Stand it bone-side down and the meat never touches metal during the long, low stage, which is exactly what you want when the goal is evenness.
Leftovers are the point
Cold rare beef is better than hot rare beef reheated. Slice leftovers thin for sandwiches rather than microwaving thick slices, and use the bones for stock in the same Dutch oven you braise in. Our braising guide covers the stock method.
