Yes, you can use cast iron on both glass-top (ceramic) and induction cooktops. On induction it is actually ideal, because induction needs a magnetic pan and cast iron is magnetic. On a glass-ceramic electric top it works fine too — the only real risk is scratching or cracking the glass, which you avoid by always lifting the pan (never sliding it) and using a flat-bottomed pan on moderate heat.
Cast iron gets an undeserved reputation as a problem on modern cooktops. The truth is it works on every kind of stove, and on induction it is one of the best materials you can use. What is true is that a heavy, sometimes rough-bottomed iron pan demands a little more care on a smooth glass surface than a light aluminum one. Here is exactly how to use it well.
Induction: cast iron is ideal
Induction cookingworks by creating a magnetic field that induces heat directly in the pan, so it only works with ferrous (magnetic) cookware — and cast iron, bare or enameled, is strongly magnetic. That makes it a natural fit: it heats efficiently, and its thermal mass smooths out induction's otherwise fast, responsive heat. Glass-ceramic electric: works, with care
On a smooth glass-ceramic radiant cooktop, cast iron cooks well and its heat retention is an advantage. The real cautions are about the glass, not the cooking:
- Never slide the pan — lift it. A heavy pan dragged across the glass, especially one with a rough or seasoned-rough base, can scratch the surface. Pick it up to move it.
- Do not drop it. Cast iron is heavy and glass tops can crack under a sharp impact. Set pans down gently, and take extra care with a full, heavy dutch oven.
- Use a flat, clean bottom. A smooth, flat pan base makes the best contact and is gentlest on the glass. Wipe grit off the pan bottom before it goes on the stove.
- Favor medium heat. Cast iron holds heat, so you rarely need high — and moderate settings are kinder to a glass top, which can be stressed by extreme, uneven heat.
Does cast iron scratch a glass cooktop?
It can, if you drag a rough-bottomed pan across it — but it does not have to. The scratches people blame on cast iron come from sliding, grit trapped under the pan, or an unusually rough base, all of which are avoidable. Lift rather than slide, keep the pan bottom clean, and a cast iron pan lives happily on a glass top. If your pan's base is especially rough, a quick smoothing with fine sandpaper or simply choosing a flatter pan removes the worry.
