Cast Iron Smash Burgers

A smash burger is engineered for crust: you take a loose ball of beef, slam it thin onto a screaming-hot cast iron surface, and let as much of the meat as possible brown hard and lacy. More contact means more browning, and more browning means more flavor. Salt it, smash it, flip it once, cheese it, and cook the beef through to 160°F.
This is a two-minute-a-side burger with more crust than a quarter-pounder twice its thickness. The whole technique exists to maximize browned surface area, and cast iron is the perfect stage for it because it stays blazing hot under the beef. Whether you use a skillet or a flat griddle, the method is the same.
Why cast iron for smash burgers
Crust is the Maillard reaction, and it runs fastest and deepest at high, steady surface heat. When you smash a cold ball of beef flat, its moisture and cold would normally crash a thin pan's temperature and steam the meat gray. Cast iron does not flinch, because its thermal mass holds the heat right where the beef is pressed down. That is why the crust forms in seconds and the burger stays juicy: a fast, hard sear seals a thin patty before it can dry out. Use 80/20 (80 percent lean) ground beef — the fat is flavor and it bastes the crust as it renders.
Skillet vs griddle
A heavy cast iron skillet does a great job and is what most people own. A flat cast iron griddleis the upgrade: its open, edge-free surface lets you smash more burgers at once and slide a stiff spatula clean under the crust, and it vents smoke better than a walled pan. If you cook burgers for a crowd, the griddle wins; for one or two, the skillet is perfect. Either way, ventilate — this cooking smokes.
Ingredients
Makes 4 burgers (double patties for 2).
- 1 lb (450 g) ground beef, 80/20, formed into 4 loose balls
- Kosher salt and black pepper
- 4 slices American cheese (or your melting cheese of choice)
- 4 soft burger buns, toasted
- Neutral oil for the pan; your favorite toppings and sauce
Do not pack or season the balls ahead — keep them loose so they smash thin, and salt only once they hit the pan, because early salt firms the texture.
Method
- Get the iron ripping hot. Heat a cast iron skillet or griddle over medium-high to high for several minutes until a drop of water skitters and vanishes. Film it lightly with oil. A hot surface is non-negotiable for crust.
- Smash immediately.Set a beef ball on the hot iron and, within a few seconds, smash it flat with a sturdy spatula (press a second spatula or a burger press on top for leverage). Aim for about a 1/4-inch-thick, craggy-edged patty. Smash it once, hard — then leave it.
- Season and sear.Salt and pepper the top. Let the patty sear undisturbed for about 2 minutes, until the edges look brown and lacy and a deep crust has formed on the underside. Do not move it — the crust needs to set.
- Flip once. Scrape a stiff spatula fully under the patty to lift the whole crust with it, then flip. All the browning you just built is on that bottom face; a clean scrape keeps it on the burger.
- Cheese and melt. Lay a slice of cheese on right after the flip. Cook about 1 to 2 minutes more so the cheese melts and the second side browns.
- Cook it through, then build.Ground beef needs to reach 160°F throughout — thin smash patties get there fast, but a thermometer confirms it. Stack onto toasted buns with your toppings and eat immediately, while the crust is crisp.
The safe temperature:unlike a whole steak, ground beef must be cooked to 160°F throughout, per the USDA's safe minimum internal temperatures. Grinding spreads any surface bacteria through the meat, so burgers are not cooked to the same doneness as steak. Thin smash patties hit 160°F quickly.
Tips
Smash within a few seconds of the ball hitting the pan — wait too long and it seizes and will not spread. Do not smash a second time after that first press; you only squeeze out juices. A wide, stiff metal spatula is the one tool that matters, because a clean scrape is what keeps the crust on the burger. And do not crowd a skillet: too many patties at once drops the temperature and you lose the sear. If this becomes a regular thing, a flat cast iron griddle makes cooking a batch far easier.
