How to Preheat Cast Iron
Cast iron rewards patience. Preheat on medium, give it several minutes, and it turns from a sticking, uneven pan into a searing machine.

Preheat cast iron on medium heat and give it time — several minutes, not thirty seconds. Iron is heavy and heats slowly and unevenly, so it needs a patient, even warm-up. Add your oil after the pan is hot, use the water-drop test to know when it is ready, and for really even heat, either rotate the pan or preheat it in the oven. Skipping the preheat is the number-one reason food sticks and searing disappoints.
Most cast iron complaints — sticking eggs, gray steak, uneven cooking — are really preheating complaints. People treat iron like a thin nonstick pan that is ready in seconds. It is the opposite kind of tool, and once you preheat it correctly, half the problems people blame on the pan simply vanish.
Why cast iron needs a slow preheat
Cast iron is all about thermal mass— a lot of heavy metal that soaks up heat slowly and then holds it like a battery. That mass is the whole reason iron sears so well: once hot, it barely drops in temperature when a cold steak hits it. But the same mass is why it takes minutes, not seconds, to come up to temperature. Cast iron is also a mediocre conductor, so heat spreads sideways slowly. Put a burner under the center and you get a hot bullseye with cooler edges until the whole pan has time to even out.
The fix for both is time on medium heat. High heat rushes the center hot while the edges lag, and can scorch oil and seasoning before the pan is evenly ready. Medium and patient beats high and fast every time.
The step-by-step preheat
- Start dry, on medium.Put the empty, dry pan on a burner set to medium. Not high — medium. High heat only exaggerates the hot-center, cool-edge problem.
- Give it a few minutes.Depending on your stove and the pan's size, three to five minutes is typical. There is no shortcut; the mass has to soak up the heat.
- Even it out. Rotate the pan a quarter turn once or twice, or slide it briefly to a second burner, so no single spot runs ahead. For the most even result of all, preheat the pan in the oven (see below).
- Test it. Use the water-drop test in the next section to confirm the pan is actually hot, rather than guessing.
- Add oil last. Now add a little oil, swirl it to coat, and let it shimmer. Adding oil to a cold pan means it sits in the hot spot too long and starts to break down before the food arrives.
The water-drop (Leidenfrost) test
The classic way to know a pan is ready is to flick a few drops of water onto the dry surface. If the water sizzles and evaporates instantly, the pan is warm but not yet screaming. If the droplets ball up and skitter across the surface like tiny beads of mercury, the pan is properly hot — that skittering is the Leidenfrost effect, where the water rides on a cushion of its own vapor. For searing, you want the skitter. Wipe the pan dry, add oil, and cook. For gentler tasks like eggs, the earlier sizzle stage is plenty.
Preheating in the oven for perfect evenness
When evenness matters most — searing a steak, baking cornbread, roasting — the oven is the best preheating tool there is. Set the pan in a cold oven, turn it to your target temperature, and let both come up together for a solid stretch. Because the oven surrounds the whole pan in hot air, there is no bullseye at all: the base, the sides and the handle all reach the same temperature. That even heat is what drives a uniform Maillard searacross the entire surface. Just remember the handle is now oven-hot — more on that in our cast iron in the oven guide.
Careful with empty enamel. A bare iron pan can be preheated empty as hot as you like. Enameled cast iron is different: manufacturers warn against blasting an empty enameled pan on high heat, which can risk thermal shock and dull or craze the glass. How a proper preheat fixes sticking and sear
Two things happen on a properly preheated pan. First, the surface is hot enough to trigger the Maillard reaction, the browning that not only builds flavor but actually causes food to release — protein clings to a lukewarm pan and lets go once a crust forms. Second, the heat is even, so a whole steak or a pan of vegetables browns uniformly instead of scorching at the center and steaming at the edges.
