The reason skillet pizza beats a soggy sheet-pan pie is heat from below: a preheated cast iron pan fries the dough on contact, and a two-stage cook — a stovetop start to set the base, then a blast under the broiler to melt the top — gives you a crackly, golden bottom without owning a pizza oven. Preheat the pan, build the pie fast, and finish it hot.
A real pizzeria oven runs at 700 to 900°F, which is why the crust blisters and the bottom crisps in ninety seconds. Most home ovens top out near 550°F, so the dough dries out before the base ever fries. A cast iron skillet closes that gap: it stores a lot of heat and dumps it straight into the dough, doing the job the floor of a pizza oven would do. Why cast iron for pizza
A good pizza base is fried, not baked, and frying needs steady, fierce heat at the point of contact. Cast iron delivers it because of thermal mass: the heavy pan soaks up energy in the preheat and barely cools when the cold dough lands, so the underside browns hard instead of steaming pale. That browning is the Maillard reaction and a little sugar caramelization — the same chemistry that crisps a grilled-cheese bottom. A thin baking sheet cannot do this; its temperature crashes the second the dough hits it. A cast iron pan also lets you start the pie on a burner, where you can literally watch the edge of the crust set, then move the whole thing under the broiler. Ingredients
Makes one 10-to-12-inch skillet pizza.
- About 10 to 12 oz (280 to 340 g) pizza dough, at room temperature
- 1 tablespoon neutral oil or olive oil, for the pan
- 1/3 to 1/2 cup pizza or marinara sauce
- 6 to 8 oz (170 to 225 g) low-moisture mozzarella, grated or torn
- Toppings you like, kept light — a few, not a pile
- Optional finish: grated parmesan, fresh basil, chili flakes, a drizzle of olive oil
Store-bought dough is completely fine here; let it sit out for 30 to 60 minutes so it stretches without fighting back. Cold dough snaps back and tears.
Method
- Position the rack and preheat.Set an oven rack 5 to 6 inches below the broiler element and turn the oven to its highest bake setting (500 to 550°F) to heat the whole cavity while you work. You will switch to the broiler at the end.
- Stretch the dough. On a floured surface, gently press and stretch the dough into a round roughly the size of your pan, leaving the rim a touch thicker. Do not use a rolling pin, which crushes the airy edge you want.
- Oil the pan and lay in the dough. Film a cold-to-warm cast iron skillet with a tablespoon of oil, then lay the dough in and nudge it out to the edges with your fingertips. A well-seasoned pan and a little oil are what release the pizza cleanly later.
- Build the pie fast.Spread a thin layer of sauce, leaving a rim bare, then the mozzarella, then your toppings. Work quickly and keep it light — an overloaded pie steams and goes soggy. Getting cheese right to the edge of the pan gives you a lacy, fried cheese rim.
- Start it on the stovetop. Set the skillet over medium-high and cook for 3 to 5 minutes. You are frying the base: lift an edge with a thin spatula after a few minutes and look for a dry, spotty-brown underside. This is the step that guarantees a crisp bottom.
- Finish under the broiler.Switch the oven to broil, then move the hot skillet up onto that high rack (dry mitts — the handle is searing). Broil for 3 to 6 minutes until the cheese is bubbling and blistered and the rim is deep golden. Watch it the whole time; broilers go from perfect to burnt in seconds.
- Slide it out and rest. Loosen the edge and slide the pizza onto a board. Let it sit 2 to 3 minutes so the base firms up, then add any fresh finishes and cut.
The two-stage heat is the whole trick: the stovetop sets and fries the bottom while the broiler melts and chars the top. Skip the stovetop start and you get a pale, floppy base; skip the broiler and the cheese never blisters. Do both and a home oven behaves a lot more like a pizzeria.
Tips and troubleshooting
My bottom is pale and soft
The pan was not hot enough, or you rushed the stovetop stage. Give it the full few minutes over medium-high and confirm a browned underside before it goes up to the broiler. A proper preheat is what fries dough instead of baking it.
My pizza is soggy in the middle
Too much sauce, too much cheese, or watery toppings. Go thin on the sauce, use low-moisture mozzarella, and pat wet toppings (fresh tomato, mushrooms) dry first. Fewer toppings almost always taste better.
It stuck to the pan
